1 pound flank or round steak, cut into strips
1 large onion, chopped
2 small cloves garlic, minced
1/2 teaspoon curry powder
1/4 tsp chili powder
2 tablespoons vegetable oil
1 cup canned or fresh (cored) diced tomatoes
2 cups thawed frozen broccolli florets
1 can beef broth
hot cooked white rice
In a deep skillet, soften onion and brown steak in hot oil. Stir in garlic and continue cooking for 2 to 3 minutes. Turn down heat. Stir in remaining ingredients (except rice). Cover and simmer on low for about 20 minutes, or until vegetables are softened. Serve over cooked white rice.
